Feeling Fine at 39

I just celebrated my 39th birthday a few days ago, and I have nothing but gratefulness in my heart to everyone who made my birthday truly memorable. When I was a lot younger, my birthdays weren’t so much fun because I usually didn’t have any cake — except on my 1st, 13th and 21st birthdays. For a cake lover like me, what’s a birthday without cake? This year I had not just one, but three scrumptious cakes! Hooray!!!

The first one was from my loving husband Caloy. He didn’t actually buy the cake himself; he just left the decision to me and so I chose this enchanting Mango Crunch Cake from Park Avenue Desserts in Magallanes. It’s one of the shop’s bestselling desserts and now I know why. The cake is a masterful combination of light chiffon cake, fresh sweet cream, refreshing mango slices and crushed graham crackers. It is then surrounded by white chocolate fences to complete its look. Trust me, it’s not only a thing of beauty. It tastes so delightful!

My second cake was a birthday present from my brother- and sister-in-law, Claro and Tita. It’s called Chocolat Gift Cake from Korean bakery Tous les Jours. I love gifts that say they know me very well, and this cake proves how well my in-laws know exactly what I like. It’s pure chocolate goodness that’s light on the tummy but big in taste. I absolutely love it! Love it! Love it!

This last cake was given by our neighbor, Dollie, a homebaker who sells her delicious Dollie’s Goodies in Merville Park. She is the epitome of the domestic goddess, probably made in the same mold as Nigella Lawson, which I am certainly not. She throws the perfect parties in her beautiful and organized home, she does gardening, she cooks and also bakes cookies, pastries and cakes. She has mastered the art of making silvanas and sansrival, and just perfected this new offering — her Frozen Brazo de Mercedes. I simply adore her new creation, considering that I’m not even very fond of traditional, commercially-made Brazo de Mercedes. But this frozen version is just bliss! It consists of the following layers: soft and fluffy meringue, sweet custard, luscious ice cream and a crunchy graham crust. Y-U-M!

You can bet I just had one of my happiest birthdays ever. All thanks to my family, friends and most especially to our awesome Almighty God, from Whom all blessings flow. I couldn’t ask for anything more — well, except for even more cakes on my 40th!
